Assemble these supplies:

  • 25 g (1 oz) unsalted butter
  • 225 g (8 oz) skate
  • 1 teaspoon white wine vinegar
  • 1 teaspoon capers, finely chopped
  • 1 teaspoon finely chopped gherkin
  • salt
  • freshly ground black pepper

To garnish:

  • gherkin fan

Preparation time: 5 minutes
Cooking time: 12 minutes

Steps in preparation:
  1. Melt the.butter in a small frying pan and cook the skate for about 10 minutes, turning once.
  2. Remove the fish from the pan and keep warm.
  3. Add the vinegar, capers and gherkin to the butter remaining in the pan. Season with salt and pepper and bring to the boil.
  4. Pour the sauce over the fish.
  5. Garnish and serve immediately.
