Assemble these supplies:
- 4 eggs (or at least 2 eggs per person)
- salt, to taste
- 2 tablespoons cold milk
- 2 tablespoons butter
Steps in preparation:
- Beat the eggs with a fork for one minute.
- Mix in the salt and milk.
- Melt 1 tablespoon of the butter in the top of a double boiler over very warm water.
- Add the egg mixture and cook until the eggs are thick, scraping the sides of the pan frequently.
- Remove from the heat.
- Add the additional tablespoon of butter and serve immediately.
- SERVES 2.
