Assemble these supplies:
- 1 herring, cleaned, boned, scaled and cut in half
- 25 g (1 oz) medium oatmeal
- 25 g (1 oz) blanched almonds, finely chopped
- salt
- freshly ground black pepper
- 1 tablespoon milk
- 1 tablespoon oil
To garnish:
- lemon slice
- sprig of parsley
Preparation time: 10 minutes
Cooking time: 10 minutes
Steps in preparation:
- Mix together the oatmeal, almonds, salt and pepper.
- Dip the herring fillets into the milk, then coat with the oatmeal mixture, pressing it well on to the fish.
- Heat the oil in a frying pan and cook the herrings for 10 minutes, turning once. Drain well on paper towels.
- To serve, garnish the herring with the lemon slice and parsley sprig.
