Assemble these supplies:
- 2 tablespoons peanut or vegetable oil
- 1/2 cup chopped onion
- 1 cup long-grain rice
- 1/2 teaspoon salt
- 1/2 teaspoon turmeric
- 1/3 to 1/2 cup unsweetened shredded coconut
- 1 3/4 cups chicken stock
Steps in preparation:
- In medium-size saucepan, heat oil over medium-high heat.
- Add onion and sauté, stirring occasionally, until lightly browned, about 2 minutes.
- Stir in rice, salt, turmeric, and coconut to taste.
- Add chicken stock, stir, and bring to a boil over high heat.
- Cover pan, reduce heat to low, and simmer rice until tender, about 20 minutes.
- Stir rice once with fork while cooking.
- Keep covered until ready to serve.
- Fluff rice with fork and divide among 4 dinner plates.
