Assemble these supplies:
- 4 celery stalks
- Large zucchini and large crookneck, or summer, squash
- 1 pint cherry tomatoes
- 2 tablespoons vegetable oil
- 2 teaspoons soy sauce
Steps in preparation:
- Wash and dry celery, zucchini, squash, and cherry tomatoes.
- Cut celery diagonally into 1/2-inch-thick slices.
- Cut zucchini and squash diagonally into 2-inch pieces, then slice into 1/4-inch julienne.
- Halve cherry tomatoes.
- In medium-size skillet, heat oil over medium heat.
- Add celery, zucchini, and squash, and stir fry until crisp- tender, about 5 minutes.
- Add tomatoes and soy sauce, and continue cooking just until heated through.
