Assemble these supplies:
- 1 bunch broccoli (about 11/2 pounds)
- 4 tablespoons butter
- 3 tablespoons flour
- 1/2 to 3/4 cup sour cream
- Salt and freshly ground black pepper
Steps in preparation:
- Remove all leaves from broccoli stalks.
- Peel stalks with vegetable peeler or sharp knife and cut broccoli into 1-inch pieces.
- In large saucepan, bring salted water to a boil.
- Add broccoli and cook 7 to 8 minutes, until tender.
- Drain thoroughly and puree in food processor.
- In small skillet, heat butter.
- Add flour and cook mixture, whisking constantly, until it turns pale brown.
- Add brown butter to broccoli puree, together with 1/2 cup sour cream, and stir to blend.
- If puree seems too thick, add a little more sour cream.
- Taste and correct seasoning.
- Transfer to shallow covered serving dish.
- Keep warm in 200-degree oven until ready to serve.
