Assemble these supplies:
- 2 to 3 knobs celeriac (about 2 pounds)
- 8 tablespoons salted butter (1 stick)
- Salt and freshly ground white pepper
- Freshly grated nutmeg
- 4 tablespoons finely chopped fresh parsley
Steps in preparation:
- Peel celeriac and cut into 1/2-inch slices.
- Place in vegetable steamer and steam over boiling water about 10 minutes, or until tender.
- Chop steamed celeriac coarsely and puree it in food processor or food mill.
- Melt butter and stir in puree.
- Add salt, white pepper, and nutmeg to taste.
- When heated through, cover and keep warm until serving time.
- Sprinkle 1 tablespoon fresh parsley over each serving.
